quesadilla casserole

Ingredients quesadilla casserole


2 tsp Chili powder
1 tsp Ground cumin
1 tsp Minced garlic
1/2 tsp Oregano leaves
1/2 tsp Crushed red pepper (optional)
1 lb Ground beef (can substitute)
1/2 cup Onion
2 can Tomato sauce (8 oz)
1 can Black beans drained and rinsed (15oz)
1 can Whole kernel corn- undrained (8 3/4 oz)
1 can Green chilies undrained (4 1/2oz)
6 small Flour tortillas (8 in)
2 cup Shredded chedder cheese

how to make quesadilla casserole


Brown beef and onion in large skillet on med-high heat, drain. Add tomato sauce, beans. Corn, chilis; mix well stir in all spices except red pepper. Bring to a boil. Reduce heat to low simmer 5 min. Add red pepper to taste. If desired.


Spread 1/2 cup of the beef mixture on bottom of a greased 13x9 baking dish top w/ 3 tortillas, overlapping as needed. Layer w/ 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat @n remaining tortillas beef mixture and cheese.


Preheat oven for 350°F and bake 15 min or until heated through. Let stand 5 minutes before serving.
