Ingredients mimis white chicken chili
1 tbsp vegetable oil
1 onion chopped
3 clove garlic crushed
1 can mild chopped green chilies (4 oz can and I only use half)
2 tsp ground cumin
1 tsp oregano
1 tsp cayenne pepper
2 can chicken broth 14.5 oz each
3 cup cooked chicken shredded/chopped
3 can White beans
1 cup Monterey Jack cheese

Cook and stir Onion in oil until tender. Add garlic, chile peppers, cumin. Oregano and cayenne. Stir and cook for a few more minutes.
Stir in chicken broth, chicken and beans. Simmer 20 minutes stirring occasionally.
Remove mixture from heat and fild in cheese until melted.
