Ingredients cauliflower and broccoli cheese bake

40 grams flour
40 grams butter
400 ml milk
150 grams cheese
1 tsp mustard
1 medium bay leaf
2 medium sprigs of fresh thyme
1 pinch salt
1 pinch black pepper

Preheat oven to 190C / 375°F / Gas mark 5.
Wash the cauliflower and broccoli thoroughly, break into florets and place into a pan of boiling salted water. Simmer for about 5 mins till the vegetables are tender but not soft. Drain and set aside in your oven dish of choice.
To make the sauce, a tip from Delia Smith. Put the flour, milk and butter in a pan and heat gently from cold. Whisk continuously until smooth. Add the mustard, thyme, and bay leaf. Continue whisking while adding the cheese (keeping back a generous hand full for the topping). Whisk for about 4 minutes till the sauce thickens. Remove the bay leaf and sprigs of thyme, season to taste.
Pour the sauce evenly over the cauliflower and broccoli. Covering as much as you can. Sprinkle the remaining cheese over the top of the dish.
Place dish into pre heated oven and bake for 25 - 30 mins till golden brown and bubbling.
