carrot ginger soup

Ingredients carrot ginger soup


1/4 cup butter or coconut oil
1 cup onion chopped
3 cup carrots (peeled and chopped)
1 large potato (peeled and cubed) or 1 cup cooked lentils
1 celery
3 cup chicken broth or vegetable broth
1 tsp ground or fresh ginger
1/2 cup milk or coconut milk
1 tsp curry powder
1/2 tsp salt
1 black pepper (to taste)
t tsp thyme
2 cup butternut squash (optional)

how to make carrot ginger soup


Heat butter over low/medium heat, saute onions until translucent


Add carrots, potato, celery, broth and ginger. Cover and bring to boil. Reduce to low heat, simmer for approx 30 min or until vegetables tender. Stir occasionally.


Blend until smooth. Stir in milk, curry, salt and pepper. Simmer over low heat until heated through and reaches desires consistency (approx 10 min)
