bacon mushroom chicken pasta

Ingredients bacon mushroom chicken pasta


1 box rigatoni pasta or similar
3 piece bacon chopped
1/2 yellow onion finely chopped
3 tbsp garlic minced
1 chicken bouillon cube
1 cup half and half
1 cup ricotta cheese
4 cup fresh sliced baby Bella mushrooms
2 cup diced cooked chicken
1/2 cup grated parmesan cheese
1 salt pepper dried thyme Italian herbs to taste
1 optional - green onion sliced to garnish

how to make bacon mushroom chicken pasta


Make pasta according to box directions, reserve a little water for thinning sauce if needed


In large skillet/saute pan, fry bacon bits and render as much fat as possible


Scoop out bacon and drain on paper towel and add chopped onion and garlic to bacon fat


After garlic and onions have softened, add mushrooms and season with thyme, salt and seasonings


After mushrooms have softened a bit add ricotta cheese, half and half, and bouillion cube and stir to incorporate


If sauce too thick, ladle some pasta water to thin it out


Add cooked pasta, chicken, and bacon bits to sauce and toss together Parmesan and Italian herbs


Garnish with green onion or fresh parsley, optional - serve hot
