500 ml fresh milk
150 grams rice
60 grams grated parmesan cheese
6 eggs separated
1 tbsp melted butter
salt

how to make amies mother perfect savory rice cake


Heat the milk and bring to the boil. Cook the rice for 3 minutes in salted, boiling water. Drain and transfer the rice into the milk and let it boil for 15 minutes, or until cooked.


When rice is done, put the rice in a mixing bowl, add the butter, mixing well to combine. Add egg yolks, one at a time and stir well. Add the parmesan cheese and combine.


Beat egg whites until stiff, stir into the egg yolks mixture in three (3) batches. Pour into prepared baking round pan and bake in the preheated oven at 180ºC for one (1) hour. Cool the cake.
