300 grams self-raising flour
150 grams (superfine) sugar sifted
250 ml fresh milk
60 grams butter melted
1 large egg
1 tsp vanilla extract
100 grams dark chocolate chopped
100 grams milk chocolate chopped
100 grams white chocolate chopped

Heat the oven to 200ºC. Place paper cases in a 12 hole muffin tin.
Mix the flour and sugar together in a mixing bowl. Whisk together the eggs, butter and milk until smooth and blended. Mix in the dry ingredients (flour and sugar) until combined.
Add the chocolates and mix well together until just combined. Spoon into the paper cases and bake for 25-30 minutes until risen and firm to touch.
Cool for 5 minutes in the tins, then place on a wire rack to cool completely. If desired, you can pipe a swirl of buttercream frosting on top of each muffins.
Serve with hot/cold tea or with hot/cold milk and coffee. Share and enjoy.
